Peanut Butter Cups

1 bag chocolate chips
2 tbs. shortening

3/4 c. creamy peanut butter
3/4 c. confectioner sugar

1 tbs. melted butter

Apple Cake

From: Aunt Betty

2 c. sugar
1 1/4 c. oil
2 eggs beaten
2 tsp. vanilla
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp salt
3 c. apple (plus)

Mix all ingredients. Pour into pan. Pour 1/4 c. milk over batter and sprinkle with sugar.

Bake at 350 for 50 minutes.

Cobbler

3 tbsp butter
1 cup flour
1 cup sugar
1/4 tsp salt
3/4 milk
Fruit ( as you like it)

Melt butter in bottom of casserole dish in oven. Top with

Banana Bread

3 bananas
1 c. sugar
1 tsp. salt
1 tsp. baking soda
2 c. flour
1 egg
1/4 c. melted butter

Blueberry Buckle

1 c. sugar
2 eggs
1 c. sour cream
1 tsp. soda
2 c. flou
1 pint blue berries

Topping:
1/2 c. sugar
1/2 c. flour
cinnamon
1/4 c. softer butter

Bread Salad

It's official name is panzanella, but in our house it will always be bread salad.


Lots of tomatoes and basil
3 or so cloves of garlic
Kosher salt and pepper to taste
1/2 cup or so of olive oil
Italian seasonings

Let it sit and marinate.

Add mozzarella cheese and chopped stale  bread just prior to serving.

Buckeyes

Maggie, a friend of the family, gave my mom this no-bake dessert recipe years ago.

According to my mom, they were hanging on the door one Christmas Eve and we ate them immediately. They've since become a staple at our Christmas Eve celebrations. My uncles and cousins fight for them.

1 jar creamy peanut butter
1 lb confectioner sugar
1 stick butter
Approx. 4 cups rice krispies

Mix together

Roll in balls and dip in chocolate

Carrot Cake

I was so happy when I found a $12 food processor at an Estate Sale because it meant pesto and my mom's  carrot cake were in my future.

The cake is super easy to make and always a hit.

1/2 cup oil
2 cups sugar
4 eggs
2 cups flour
2 tsp soda
1 tsp salt
3 heaping tsp cinnamon
2 tsp vanilla
4 1/2 cups carrot (1 lb)

Combine sugar and oil, add eggs.

Add dry ingredients.

Add vanilla and carrots.

Bake 325 for 45+ minutes in greased and floured pan.

Cream Cheese Frosting

1 stick butter
8 oz cream cheese
1 lb confectioner sugar
1 tbsp vanilla

Strawberry Jam

Today marked the beginning of strawberry season. I celebrated by picking five quarts and making a batch of jam.

I used the new Ball pectin and it's unclear if it's worked. The jam still seems runny, so it might be re-appropriated as strawberry topping.

I love hulling strawberries. I find it oddly soothing. And the smell of strawberry jam. And it's such a pretty color.
